3. Review legal requirements and contracts
4. Recognize the fundamentals of total pricing, transportation arrangements, site selection, menu planning, and meeting evaluation
5. Describe the formats and uses of the specification sheet prepared by the convention service manager
6. Describe typical function room furniture, meeting setups, and time/usage considerations for function rooms
7. Identify different types of food functions and types of food service; describe beverage service issues
8. Differentiate between in-house service providers and outsourced service providers; determine which service is appropriate to use at a meeting
